Bisbee’s Love Affair with Pastries

Inspired by world flavors and a passion for savory pastries, one local baker has found the perfect recipe for life in Bisbee.

Not every career path follows the recipe you expect.

Originally from St. Paul, Minnesota, pastry chef, Jackie Ayd Oatman, found her calling through a bit of unexpected advice. While working in their mid-twenties at a lovely Minneapolis bistro, they planned to attend culinary school. But their boss, the restaurant’s chef and owner, offered a suggestion that would change everything: study pastry instead.

“He told me it would set me apart from the herd if I was serious about working in food,”  she recalled.

The advice stuck. Years later, that decision continues to shape a career centered on creativity and a deep appreciation for the art of baking at Patisserie Jacqui, located at 91 Main Street, Bisbee, AZ.

Among all the pastries in the world, croissants and laminated pastries hold a special place in Jackie’s heart. The delicate layers, precision, and endless possibilities for flavor make them a constant source of inspiration. While sweet pastries certainly have their appeal, it’s the savory side of baking that truly excites her.

Travel also plays a major role in Oatman’s creative process. Exploring how different cultures approach food, whether it’s discovering a regional specialty or finding new ways to weave international flavors into familiar baked goods.

After moving to Bisbee in November 2013, Jackie brought that passion and curiosity with her, helping contribute to the town’s vibrant food scene.

Even after long weeks spent baking, the love for pastry doesn’t end when the workday is over. One cherished Sunday tradition involves bringing home two different savory croissants from the shop, warming them in the oven, and serving them with a simple salad and a fried egg.

“It’s a well-deserved treat after a long week,” she said.
